A Hands-On Introduction to Oysters

Discover how growing region, water, farming method and handling create the flavors and textures found in every shell.

The Guided Tasting

Taste six oysters—three East Coast and three West Coast—selected to highlight meaningful differences in salinity, sweetness, size, texture and finish. The EDWINS team will explain how oysters are grown, harvested, named and brought from the water to the raw bar.

The Shucking Lesson

After a live demonstration, every guest will shuck two oysters with direct guidance from our team. The class is relaxed, approachable and designed for beginners—no prior experience is necessary.
